    Chinese noodles

    As a big fan of noodles, I always want to introduce you to the best choices of Chinese noodles.  Chinese noodles come in a variety of shapes and sizes, each with its own unique texture and flavor. They can be served in soups, pan-fried to make chow mein, or mixed such as lo mein.

    We also have different types of noodles used in our daily cooking.  The most common type of Chinese noodle is the round, white noodle, which is made from wheat flour and water.  You can try to make this totally by hand or using a noodle presser.  These noodles are typically used in soups and stir-fries.

    Egg noodles are another popular made from wheat flour, eggs, and water, and they have a yellowish color. Egg noodles are commonly used in noodle soups or chow mein. It is much chewier than the common noodles without eggs.

    Lye noodles also have a yellowish color but are much lighter than egg noodles. The color is coming from a lye solution used, sometimes lye water or lye powder.   Ley noodle is the perfect choice for chow mein because they can be super thin but very strong.

    Thin rice noodles are made from rice flour and water, and they are commonly used in soups and salads. They have a delicate flavor and a chewy texture.

    Finally, there are glass noodles, which are made from mung bean starch and water. Glass noodles are clear or translucent, and they have a bouncy texture. Glass noodles are often used in vegetarian dishes.  And they can be super good with stews too.  See how to make a potato noodle from starch.
