Easy and light one pot rice with ribs and corns is frequently on our table in summer. It is quite easy to prepare since we usually use rice cooker to cook. In order to make the recipe match with the hot summer day, I add only a few of condiments. So this is a very light version. But you can make it hotter by add dried chili peppers and darker with dark soy sauce.

One pot rice with ribs and corns

We love to add meat or other vegetables to our rice cooker when making steamed rice. As a group of dishes, we call them “焖饭”. Those steamed rice dishes are easy to make, balance in nutrition and quite yummy. I use a summer ingredient- fresh corns which brings a sweet taste to the rice. The ribs are tender and soft and the grains are full of flavor after combined with the aroma from the vegetables and ribs.

Ingredients

  • 100g ribs
  • 1 tbsp. light soy sauce
  • 1 tsp. salt
  • 1 tbsp. cooking oil
  • 1 thumb ginger, sliced
  • 3 scallion whites
  • 4-6 dried shiitake mushroom, rehydrated
  • 2 cloves garlic, minced
  • 2 cups of rice
  • 2 cups of water
  • 1 cup of diced carrots
  • half of a corn
  • pinch of salt
  • dash of black pepper
  • green onion or coriander leaves for decoration

Steps

Wash and well the ribs and then marinate with salt and light soy sauce.

Wash the rice and then add water, corn, carrots and shiitake mushrooms.

Heat up around 1 tablespoon of cooking oil in a wok, fry garlic, ginger and scallion over slow fire until aromatic. Then Sautee the ribs until slightly browned. Transfer all the content to the rice cooker.

Cook with rice procedure. When the rice is ready, add a small pinch of salt and dash of pepper. Serve warm.

Notes

You can drizzle some light soy sauce if the rice is not salty enough.
