How long to cook the chicken feet

You can adjust the cooking time of chicken feet. If you want a chewier texture, cook the for 8 minutes. If you want a softer version, cook for 12 to 15 minutes. However don’t overcook them, otherwise, the skin and shape will be destroyed.

If you prefer a super chew version, 5 minutes are enough.

In a deep pot with enough cold water, add chicken feet, cooking wine, and rice vinegar. Bring the content to a boil and then cook for 8 minutes (depending on how soft you want the chicken feet to be).

Ingredients

  • 20 chicken feet
  • 1 tbsp. Chinese cooking wine
  • 1/2 tbsp. white rice vinegar

Sauce

  • 3 tbsp. light soy sauce
  • 1/3 cup rice vinegar , or black vinegar
  • 2 lemon , smaller ones (around 200g)
  • 1/4 cup chopped coriander
  • 1 tbsp. chopped ginger
  • 2 garlic cloves ,smashed
  • 1 tbsp. sugar
  • 3 fresh Thai chili pepper , one red and one green| cut into small circles. This can be adjusted by persoanl perference
  • 1 tsp. salt
