Chicken feet soup with peanuts

  • 10 chicken feet
  • 50 g lean meat
  • 1 cup peanuts
  • 5-8 dried red dates
  • 1 tbsp. goji berry
  • 10 dried longan
  • 2 slices of dried Chinese yam , optional
  • 2 pieces dangshen , optional
  • 2 green onion
  • 1 thumb ginger , smashed
  • 1 tbsp. Chinese cooking wine
  1. If using dangsheng and dried yam, pre-soak them in cold water for 30 minutes.

  2. Wash the chicken feet carefully and cut off the nails.

  3. In a large pot of water, add ginger, green onion and cooking wine. Cook the chicken feet for 2 minutes after water boils and then transfer out and wash under warm water.

  4. Place chicken feet, lean meat, smashed ginger, dried red dates, longan, goji berry, dried yam, dangsheng in a pot. Add 4L water. Bring to a boil and then heat over fire fire for 10 minutes, and then cover and continue simmering for another 30 minutes.
