Healthy bitter Melon Juice with apple and lemon water.
Bitter melon is a really popular ingredient in Asian countries. It is the vegetable I both love and hate.
There are many Chinese bitter melon recipes from salad to soup, from braised recipes to stir fry recipes, from tea to juice. Bitter melon has many health benefits including losing weight, fighting against cancer, cool the body down etc. It may also be used as a source of vitamins and minerals, particularly potassium, folate (Vitamin B9), Vitamin C and Vitamin K. That’s the reason why I love it.
But personally I do not like the bitter taste. Not at all! During my childhood, I seldom eat bitter melon although my mother had made very delicious dishes out of it. So in this juice recipe, I add some apple and lemon juice. Ps, raw honey is a healthy natural sweetness.
Some tips for selecting bitter melon: choose firm ones and younger ones. Older bitter melon provides much more bitter taste. My suggestion is to start with fresh and young ones if you haven’t been fall in love with this healthy melon.
Put everything in your food processor. Blend until very smoothie. If you are brave enough, you can drink the smoothie directly without filter the bitter melon out.
And then drop lemon juice and add some honey for a better balanced taste. Of course, honey is optional.
- 1 bitter melon
- Apple cubes as desired
- 1 tablespoon raw honey for each serving (optional)
- 1 teaspoon lemon juice for each serving
- 2 cups of purified water
- Cut the bitter melon in halves and then remove the seeds.
- Cut the bitter melon including the skin into small cubes. Through bitter melon, apple and add purified water. Blend until smoothie.
- Filter the juice out. Add lemon juice and honey if needed.
- Chill before serving.
