Cut the pork butt into thick slices, about 1cm. Add oil to the pan and fry the pork butt until golden brown on both sides. Remember to let it cook for a while until it's crispy before turning.
When the pork is well seared, add garlic, ginger, and scallion. Fry until aromatic over slow fire. Season with light soy sauce and oyster sauce, and heat water to cover.
Then add 2 tablespoons of plum sauce. Cover and simmer for 10 minutes.
Pick out the scallion, ginger and garlic. Turn up the heat and thicken the sauce a little.
Cut into strips before serving. If there is any leftover sauce, drizzle it on top.
