Braised noodles with garlic and sweet potatoes.
It is a nice time to eat sweet potatoes. In fact I am a big fan of sweet potatoes and purple sweet potatoes. When making wontons, dumplings or steamed buns, I always love to add purple sweet potatoes to bring the lovely purple color of my dish.
Recipe shared today is noodles cooked with sweet potatoes and purple sweet potatoes and the method is called as 焖 which is similar to simmer. If you love chow mein, I believe that you will love this healthy and vegan noodle recipe too.
And garlic cloves are the main seasonings for flavoring. Cut the white part and green part of spring onions finely.
Heat up cooking oil and stir-fry garlic and spring onion white until aroma.
Add sweet potato cubes in.
Garnish chopped spring onions on top.
- 8 oz. fresh noodles , I use the wider ones
- 1 middle size sweet potatoes
- 1/2 middle size purple sweet potatoes
- 2 teaspoons cooking oil
- 3 cloves garlic chopped
- 1 teaspoon chopped white part of spring onion
- Water as needed
- 2 teaspoons salt
- 1 teaspoon sesame oil
- 1/2 tablespoon light soy sauce
- 1 teaspoon finely chopped spring onion for garnish
Peel and cut sweet potatoes and purple sweet potatoes in small cubes. And also finely cut both the white part and green part of spring onions.
Heat up cooking oil in pan. Add chopped garlic and white part of spring onions in to stir-fry until you can smell the aroma.
Add sweet potatoes cubes in and mix welly.
Pour enough water in pan, you need to cover all the sweet potato cubes and simmer for around 5 minutes. With the pan covered please!
Add fresh noodles in. Mix welly with the sweet potato cubes and simmer until the water added are almost gone.
Add salt, sesame oil and light soy sauce. Mix well.
Transfer the noodles out from pan to serving bowl and garnish some chopped spring onions on top.
